"An unassuming roadside restaurant built around a single vintage rotisserie that the chef, Rebecca Bockelie, centered the entire operation on when she opened it in December 2017. Whole organic chickens are brined overnight in honey, sea salt, and sugar and cooked over mesquite and pecan wood, yielding exceptionally juicy meat and burnished, crackly skin.
