Premium sushi omakase, sake, and Japanese whiskey in intimate setting

"This tiny omakase counter has only eight seats, so you have slightly better odds of booking just one instead of two. The 13-course meal is $85 per person (with an optional $55 beverage pairing), which is a pretty decent deal considering the fact that it contains some of our favorite individual pieces of fish at any price point. People tend to strike up a conversation across the counter here, so don’t be surprised if you leave with a new favorite sub-$100 omakase spot and a new friend." - bryan kim, neha talreja, will hartman, willa moore, molly fitzpatrick

"Tucked inside the Ritz-Carlton Laguna Niguel in Dana Point, I experienced a new omakase pop-up from New York–based chef Kei Yoshino in partnership with restaurateur Ryan Chadwick that runs July 15 through November 5; the 16-course meal is priced at a fairly modest $175 per person and can be paired with beverages for an additional $95. Highlights of the lineup include A5 wagyu, zuke toro nigiri, Hokkaido uni, hay-smoked Spanish mackerel, and toro tartare with osetra caviar, with much of the seafood sourced from Japan; seatings are at 5:30 p.m. and 8 p.m. Wednesday through Sunday and reservations are available on Tock." - Matthew Kang

"Part of a quickie‑omakase trend that makes multi‑course, high‑quality sushi accessible: minimally furnished rooms and tightly timed service let diners enjoy roughly a 12‑course tasting in about an hour for roughly $100 per person, with offerings that can include uni, caviar, and premium Japanese beef — provided you arrive punctually and forgo amenities." - The Editors
