7 Big Food Trends of 2026, According to Our MICHELIN Guide Inspectors

"In Copenhagen, this sushi counter works with clams that take decades to mature, letting the natural age of the product determine both texture and flavor, and the counter seating places guests close to the preparation for a more immediate, intimate connection to the kitchen." - Lanie Goodman

"The historical gem that is Nordhavn’s old Customs House was painstakingly deconstructed in 2019, with each limestone block numbered, before 2024 saw it lovingly reassembled again in its same 1916 design. Now home to 15-seater Sushi Anaba, it combines Danish tradition with a Japanese aesthetic, the centrepiece of which is a beautiful Douglas Fir counter. Run by a Dane who trained as a sushi apprentice in Tokyo, the Edomae-style nigiri and otsumami demonstrate incredible attention to detail, from the three-vinegar-seasoned rice from Niigata served at body temperature to the sumiyaki (flan) cooked in a cast-iron mould over charcoal." - Michelin Inspector

The 38 Best Restaurants in Copenhagen, Denmark | Eater

"Thanks to Mads Battefeld, who used to work in Japan, Copenhagen has a world-class (and according to many, Michelin-worthy) sushi omakase utilizing sustainable seafood from the Nordic region. The nigiri and otsumami (snacks) menu could involve ingredients such as aged wild trout from southern Sjaelland, cross-hatch-cut herring with sesame and umeboshi, and honey-infused tamago cooked over charcoal. For years, Anaba has been one of the toughest spots to book in the city. Together with sake sommelier Henrik Ando Levinsen, Battefeld also runs sister restaurant Kappo Ando, which offers a more casual setting focused on yakitori grill." - Anna Norström

Undoubtedly the best sushi in Copenhagen if not Europe. Impressed by their deep love and respect of Japan, the whole team there radiates from it. Sushi Anaba is a delightful experience that warrants visiting over and over. The space is beautiful, the service is immaculate, the wine list is seriously impressive and the food is simply sublime.

Top 5 best restaurant experience ever. From the moment we arrived until we left the after-dinner lounge it was a perfect evening. Mads and the team are highly skilled at translating the Japanese kitchen to a Nordic context, and we were surprised and awed by the new and unique taste, flavour and texture we got to experience throughout the meal. A must visit and we are sure to be back.

This is probably the best sushi place in the nordics. Seats a dozen by the counter where you can watch chefs preparing your meals. Be on time (or a little early) as the service starts exactly on time. The food is a mix of different preparations - you'll get some nigiris, different parts of tuna in various preparations, a curry/tonkatsu-like dish, but also fresh local tomato presentation. Two plus hours will fly by quickly and you'll love every minute of it.

You'll never taste better sushi than this. The experimental take plus the traditional serving style is exquisite. Think I tasted more than ten types of fish I had never tried before. The first Michelin rated restaurant that is 100% worth every expensive kroner!

Sublim - exceptionel - and yet so unbelievable simple! Sushi Anaba was everything we dreamed it would be. Guided by quiet mastery, chef Mads Battefeld crafted each piece with intent — not to impress, but to express pure, uncompromising perfection & tradition. We were blown away! Why this hasn’t 1 or 2 Michelin stars, is still a mystery, but that doesn’t change the fact that this is one of Copenhagen’s best food experiences!

Sushi Anaba is an experience beyond words. Each dish is an artistic masterpiece prepared with precision. The setting is intimate, with only a few seats around the counter, allowing for a personal experience where you can watch the chef’s meticulous preparation. It’s an experience that transcends a typical meal — Sushi Anaba is truly a must-visit. Words simply can’t do justice to the remarkable journey your palate will experience here.

An incredible experience with a delicious tasting menu. The sushi and warm dishes were all complex, fresh and delightful. Impeccable attention to detail, from the interior decor to the food preparation to the greeting when we arrived. Worth it!!

Located just at the corner of the building, the entrance is where there is a small court yard outside. The staff were very friendly and greeted us in similar Japanese manner. We had a non alcoholic pairing with the sushi omakase and it worked well. The seafood was very fresh and used a wider variety of fish within Scandinavia. Although some dishes were slightly salty, but it may be catered for the Danish palate. A combination of traditional and contemporary techniques. Highly recommend! 😋🍣
