This place is incredible. My boyfriend and I went in expecting small plates and were pleasantly surprised by how large the plates were. We had the risotto and the muscles to start, which were the perfect combination. These dishes are some of the best we’ve ever had - will be dreaming about those muscles. The short rib was good (I’m not a huge red meat person), but my boyfriend liked it a lot. The ambiance was wonderful - amazing art work on the walls, open kitchen and family style tables. Service was friendly and attentive as well. Highly recommend to anyone looking for a nice dinner out, you won’t be disappointed!!

After searching for "late dinner Guadalajara" results said they were open until midnight on a Friday night. Got dropped off there at 10pm for dinner, security officer laughed at my face. Management: You are a restaurant so please uodate the kitchen hours. Update: Had a friend visiting and took her for dinner on a Wednesday night. The décor is bones, they managed to make a boneyard look chic. The menu is one page and ever changing. We ordered the Beef Tartar, the mussels made my foodie friend cry of foodie bliss. The drinks were delicious. I had a cold and ask the bartender to make me something spicy and he delivered a delicious citrusy, habanero infused tequila drink with chili oil that was exactly what my throat was asking for. Service was exceptional. Crumbs of bread barely made it to the table that the waitresses were wiping it. We had no room for dessert, unfortunately. My only gripe is the "late night dinner" bit of misinformation online but I changed from 1 to 5 stars. I had a good experience. Update ~again~ Michele is a Master Chef contestant, she had a blast at the restaurant and yes, the mussels dish made her cry. 😄

We had an incredible experience at Hueso, the food was delicious and the service was even better. We were a group of 11 and made reservations ahead of time, a private room was ready as soon as we arrived. We started with cocktails and opted for the family style chef's menu. We had 6 appetizers, four mains and three desserts. Everything was excellent but the highlights were the mussels and bread with the creamy beef broth, the pork belly, rack of lamb and the roast duck. Oh and the creme brulee. The servers were funny, patient and attentive. Great presentation, and beautiful, trendy decor. We paid around $55 US each.

The staff was incredibly friendly, The ambience was comfortable, it is a little hidden and off the path. But just trust in the navigation. Also, the portion sizes are very large so just be aware. If we ever return to Guadalajara we will make sure to do it again.

What a completely disappointing meal. Lots of hype. Nothing there. We ordered the prefix menu. We didn't have any other choices booking online. 20min between cold courses. Totally unremarkable cold courses. The warm course and dessert were decent, but didn't live up to the hype. I had better food at lunch Las 9 Esquinas. The service was bad. Inattentive waiters. They failed to read our pissed off body language. No management in sight. The people who had the opportunity at the non-prefix seemed to be having a better time. This was a COMPLETELY disappointing way to end our trip to Guadalajara. On the plus side I learned a new word. DECEPCIONANTE.

I wanted to love this place but left just liking it. The restaurant itself is stunning. The service is on point. Our server Enrique was wonderful. Only gripe in service was the servers hovered over while you were eating. My favorite dish by far were the mussels. It was perfectly balanced. The croutons didn't do much for the dish as it came with bread. The burrata salad had too many competing flavors. The caramelized crunch on it took away from the dish. I felt the same about the Gordita. Way too many competing flavors. The short rib was ok. It wasn't as tender as I had hoped. The chocolate tart was delicious.

Hueso was AMAZING. The decor inside is very unique, all white with a lot of bones. We were seated at a family-style long table, and ended up friends with the people next to us (and even shared food)! The wait staff was friendly, fast, and spoke both English and Spanish very well. We had the octopus, a salad, and the wild boar (meats were cooked sous vide and very tender). Truly a unique and memorable dining experience. If I'm ever back in Guadalajara, this will be a must!

If you are ever in Guadalajara and you want a meal EXPERIENCE you must make a point to go here. Beside the restaurants aesthetic being beautiful, unique and fitting to the name the plates were delicious both to the palate and the eye! Came here with a big wedding party (about 18? Maybe) and they treated us very well. The staff was welcoming and attentive. And we got lucky with a visit from Chef at the table too! This visit is up there with some of my favorite New York and Paris restaurant experiences. Thank you Hueso. Hope to be back some day!

Literally one of the best restaurants I have ever been to. I've eaten at Michelin Star restaurants and it doesn't compare to the total experience here. They embodied upscale, fine dining, in a comfortable atmosphere paired with the best service and some of the most unique and delicious food. The restaurant used to be a house and they converted it to a full on iconic dining experience in Guadalajara. All the drinks and food was good. The menu is seasonal and changes daily. Hueso was a wonderful experience through and through. The combination of atmosphere, service and food was unmatched. I was completely in awe of the ossuary-inspired decor rivaled any art gallery or museum. Even though white was the main color, the ambiance still felt warm and inviting. The inner artist/architect in me was just in awe of the beauty of bleached bones, wood, burlap, and other textures. Our waitstaff was so attentive to our every need and even though Spanish is not my first language they worked so hard to convey all the attention that went into the food and found a way to describe what I didn't know in English for me. Every single dish was very exploratory for my tastebuds (and I've got some well seasoned tastebuds). All of the ingredients were so unique and had me scouring the Internet wishing I could recreate something with the barest resemblance to the nights meal. The traditional Creme brûlée was given new life with a dusting of hibiscus powder that was simply divine. It brought such joy to an already wonderful experience. The apéritifs and the after meal cocktails were a good balance to our meal. I cannot wait to return to Guadalajara for this, despite the refinement of this wonderful establishment, it felt like a cozy welcoming old friend instead of the cold starkness you feel at other fine dining locales. So much of a fantastic culinary experience for a price within reach. Definitely worth the cost and more.

I really hate to do this but Hueso has literally left me no choice. I visited Guadalajara for the first time last week. I had my culinary itinerary planned out with Hueso being at the top of the list. As not only a connoisseur of food, but of interior design as well as a naturalist collector of taxidermy, Hueso was a must visit for me. Upon arrival, I emailed reservations right away with my availability for the week. I was lucky to receive a response the following morning, confirming my reservation for a party of 2 on the evening of 6/17/20 8pm (a Wednesday). I planned the rest of my trip around this reservation, as it was priority. The evening of my reservation, we arrived to Hueso 15 minutes early only to find the front gate locked and all the lights inside turned off. We called repeatedly as well as emailed. I even took to social media and contacted them through Instagram & Twitter, sending a picture of me in front of the establishment. The following evening Hueso reposted my Instagram story without even addressing my reservation. I followed up with a third email asking for an explanation. It's been exactly a week and still no response. Attached is a photo of my reservation confirmation, unanswered follow up email and photo in front of the closed restaurant the night of my reservation. It's a shame because I was looking forward to the experience only to be let down by the poorest customer service I've ever had to deal with.

How can it be less than five stars? In an unmarked white building with the most unique yet controversial decoration, hides an outstanding restaurant. They serve special cosmopolitan food with distinguished Mexican touch. The whole restaurant is one long chef table and the patrons sits next to each other along this long long natural wood table. The service is implacable, the creative food is being prepared in an open kitchen in front of your eyes and served to share in the middle of the table. The food presentation is playful and colorful. The chef is Excellent and manages to create unique yet down to earth dishes. Wine paring is fine by the restaurant and we had no complains about their choices. The menu changes every day and the chef use vegetables and herbs he grows in the back yard. An amazing experience and unforgettable night.

El Hueso is a one of a kind, must try dining experience in Guadalajara. I was in town for a wedding and decided to try it for a late dinner. When you first walk in, the building is nondescript with only a bone hanging over the entrance. The inside looks like a bone museum. On the bottom level you'll find large communal table seating for about 50. We had 8 people in our party and ended up being seated in one of the two private rooms upstairs which share a common balcony. We ended up ordering 4 salads, 4 mains, and 3 desserts. Portions for everything are HUGE! Initially we were brought bread crackers and a chickpea type hummus that was amazing. The salads were amazing! Extremely unique flavors (one even had guava ice cream in it). For our main dishes we ordered pork shank, rack of lamb, short rib with bone marrow, and a steak. Everything was amazing and more than adequate portions. In addition to the amazing taste and generous portion sizes, presentation and service was impeccable. Our server never let a drink go empty and genuinely cared about our experience. Presentation was not only superb on the plate, but our servers would bring each dish in at the same time and lay them down at the same time as well. El Hueso was a true dining experience. And for $50pp with more than enough food and multiple drinks, it's an experience that can't be beat. I will visit this restaurant every time I'm in town!

One of a kind experience here. I was in Guadalajara on my own so I wanted to eat good food while on vacation! I was lucky to be able to get a table as a walk in at 8pm, and turns out the seating was on a large community table. The interior is very unique, white decor with bones on the wall in a softly lit space. I was seated immediately and the dining began! Good: Impeccable service, beautiful open kitchen and very enthusiastic waiters. The waiter explained that the portions are pretty big because it's meant to be shared among the table (Ok, I'll admit I felt a bit like a loser for coming here by myself.) All the waitstaff spoke English so it was very easy to choose through the menu. He recommended I get the tasting menu for 1 for 750 peso ($49.84 CAD) , which consists of very small plates so you can sample the whole menu. That sounded really good, until I realize their version of 'small' is not tapas size small, it was actually a pretty generous portion. I think I've had a totally of 5-6 dishes, and I was on the verge of a stomach ache. Let me say, the food was amazing! AMAZING! Everything was mind blowing and so beautifully plated, I had to take pictures (further confirming that I am a bit of a loser). Bad: Waaaaay too much food for one person with their tasting menu for one, it was actually enough for 2 people to be honest. Bottomline: I'll still be back though, I highly recommend you don't come here alone and share the plates.

I randomly found this restaurant on Yelp and proceeded to immediately stalk recent goers on Instagram to get the vibe. The decor, amazing -- just like the name says, Hueso is full of bones. The service, impeccable. I think we had 2-3 servers just for us. (Well, it was a slower night) It's probably one of the fanciest spots in town, but not too fancy that I felt bored. Ya know how some fine dining feels soooo stuffy?? Not here. It was romantic and cool. One long table for all to share in the experience together. BUT, they also have private rooms upstairs for large parties. I haven't even gotten to the food!! The filet was the softest piece of red meat on earth. The raw fish full of amazing citrus flavors. Oh! And the bread to begin with was just amazing. Hueso would easily be expensive in the US, in Guadalajara it was quite affordable. We met so many people from all over the world the night we ate here. Seems to be the hottest place in town for a reason. Love it and would definitely go back again one day!

Came here last month with some girlfriends. This is probably one of the best culinary experiences I've had in my life. The girls and I shared everything (also recommended). We had chickpea "patê" served with crispy bread on the house and it was savory. The salmon was the group's favorite - so many flavors. So HUESO = Bone(s). For the price I wish I could give it 0 Stars. And trust me, I have been in GDL for 3 months and eat out EVERY NIGHT and this was the worst experience! If you have ever been lucky enough to have eaten at BONES (OMG) in Atlanta (or any other high end steak house in the USA) then this would be the exact opposite. I must say that I was excited to be going here because of the reviews. However: Ordered Rib Eye Steak etc. Mexico does not age its meats. So the whole concept (and flavor and tenderness) is out the window. If you want a good STEAK then my advise is to ONLY eat at places where they acknowledge up front that they serve USDA Prime meats. I have learned this the hard way; I actually have lived in Mexico for 5 Years; I guess I am a very slow learner. We managed to eat about 1/4 of our 850 peso "Rib Eye Steak" and then asked for a "doggie bag". I asked several tables around us if they in fact had a dog which I could give this mess to but they unfortunately did not. They suggested that there were lots of homeless people around which we could give our left overs to. I advised them that I would rather have had the option of giving it to a dog then to another human being. Worst $100 USD I ever spent; don't do it! Much better options ... One option at 1/3 the price is Res Pública(USDA) - go there for Rib Eye Steak and Tomato Salad, excellent! (So Good!)

Truly a one of a kind experience and wonderful from the moment you walk in! The space is open, inviting and expansive. Paired with the cuisine - it cannot be beat and is a must visit! My boyfriend and I made a reservation 2 weeks in advance for a Saturday night @ 8pm - which ended up being really early! Most people started to trickle into the place around 9:30p. We sat in front of the kitchen across from each other and I got the best seat in the house facing the chefs. It was amazing to watch them whip up the gorgeous dishes. Our waiter spoke english and he suggested the special cocktail of the night which had charcoal, lemon and gin. Very refreshing! We went ahead and ordered what he suggested was going to be the best options for the night - their salad with fresh tomatoes, salmon in a heavenly cold sauce, and the rack of lamb in a date/mole sauce. The BEST lamb I have ever had, it melted off the bones like butter! We also ended up having another round of a different but amazing cocktail too! Our server then suggested their chocolate cheesecake (which ended up being more of a torte) which was great but the main courses were a much bigger hit. Overall the evening was so filling, tasty and one of a kind! We spent about $160 with taxes & 18% tip - for what we ordered I would have paid double in LA! So worth it for such an amazing and memorable experience.

If you want an excellent foodie hipster well designed dinner experience, make Hueso your next reservation in Guadalajara. The outside of the building is your first clue that you are in for a different evening! And then you step inside, and you are convinced. The ambiance, the food, the service all make for a very pleasant dining adventure. From the cocktails, to the wine list, to the menu, everything was delicious and did not disappoint. The only thing that was mildly annoying was that the staff are a bit precious with their service style. Many of us have been exploring restaurants for years that are successfully stepping into this gourmet foodie space, so please don't tell us what we should order, but simply explain what you have and let us make our own selections. The whole package speaks for itself so just let us sit back and enjoy! It's wonderful.

As soon as you arrive at Huesos you feel very welcome. The staff is very friendly and professional and the atmosphere is very inviting and unique. Obviously you also go to a restaurant for the food and Huesos doesn't disappoint either in this category. The menu is very creative and the food very well presented, delicate and tasty. If you are looking for a unique dinner experience (outside of the traditional Mexican food) Huesos is definitively a place to try. It'd not a cheap place (plan $100-150 for two including drinks) but it's definitively worth it

Exceeded beyond my expectations of this place. The artistic presentation of the food was exquisite. Not only by presentation but taste and quality of the chef grows all the produce being used to create such a good looking plates. Our waiter Patrick and the staff were very kind, happy and skilled. The recommendations given to us were amazing, and it truly is a place to share ( keep in mind the plates sizes are big.) We had ordered the Hueso salad, along with the New York steak ( so delicious ). As for dessert you must try the crème brûlée. The cocktails "el Hueso old fashion" is one of the popular drinks in the menu, a very nice and well balance cocktail with a special house made syrup made with macadamia. No regrets!!

Great meal with a unique atmosphere, but portions meant for large groups. The art on the walls and ambience were a nice compliment to the creative history and vibes of the city. The menu is super varied with some spectacular appetizers/ entrees and delicious drinks. That said all of the food is meant for sharing, which means if you're a couple you can really only try two things. We asked the waiters to do a small portion, but they were unwilling to accommodate. Lastly, be prepared to pay what you would in an mid to upscale restaurant in the US ~$110 for a couple: 2 plates, 5 drinks, and dessert. We had the mussels and short rib, which were both quite good. The mussels were more buttery than we are used to, but delicious despite. Make sure to get the broth for the short rib or otherwise it will be dry. Ended up trying a margarita type cocktail which was a highlight... Had 3 of them. For dessert we had creme brûlée which was huge. Definitely try the place out, just remember you'll be paying major metro prices.

One of the best meals you will ever have. Get the tasting menu. Make friends with your neighbors. Chat with the waitstaff, they are very friendly and happy to be there. Look at the inspiring bright decor. Marvel at the natural beauty of your Mexican compatriots eating alongside you. Try the short rib and creme brulee - both amazing. Ask the bartender to recommend you cocktails. Their signature mezcal one is delicious, a balance of anisette and mezcal. This is a "treat yourself" meal - dont hold back, just have a transcendent experience. Expensive price point in pesos, but this will feel reasonable if you are used to city prices in USD. Enjoy it and love it. Can't wait to go back!

I spent about a week in Guadalajara searching for awesome restaurants and this was BY FAR the best one I encountered on my whole entire trip. All the foods were art, almost too beautiful to eat.. almost. The flavors came together beautifully and you could really taste the love and level of freshness. Also, the service was unbelievable. Two of us had 3 servers helping us out all night. Decor is beautiful as well. I can't wait to go back to GDL for El Hueso!

Great service and atmosphere reminiscent of common table type of restaurants in NY and London. The food was good but I expected more after all the hype. I much prefer its sister restaurant in Puerto Vallarta called La Leche.
