"There’s only room for about eight guests at Waltz, a standing-room-only wine bar in a GPS-confounding location about 10 minutes away from Ebisu station. You’ll know you’re in the right place once you slide open the glass door and see the Jaques Tati posters and bottles of natural wines, largely from France and Italy, chilling quietly in a corner. The bearded and bespectacled owner Yasuhiro Ooyama always has something interesting on his rotating list.
