The magnificent 19th-century facility was once home to the Christian Brothers Winery and is listed on the National Register of Historic Places. Initially, the CIA at Greystone offered continuing-education programs for foodservice professionals, but within three short years, it had launched its first-ever Worlds of Flavor® Conference and Festival and established its reputation as an international culinary pioneer. Next, Greystone added its associate-degree program in the culinary arts, and it opened the Gatehouse Restaurant, focusing on food and wine pairing."
