It’s filled with air pockets and has a nice chew, but also has just enough of a crust to maintain structural integrity without sandpapering the roof of your mouth. And while the meat-and-cheese strata taste richer and milder than other subs—which we’re guessing is because of the mortadella and mozzarella in addition to slices of capicollo and salami—there’s considerably less nuance in the overall flavor.
