"Crisp, fudgy and indecently rich, Flor’s brown butter cakes featured on the opening menu of the Borough Market restaurant in July 2019 and have been there ever since, surviving the restaurant’s recent closure and its transformation into an upscaled bakery at Bermondsey’s Spa Terminus. The brown butter cakes were originally on the menu at Flor’s elder sibling Lyle’s as a petit four, and are allegedly the restaurant’s oldest recipe. It was updated a few years ago to include the rich, molasses-like flavour of panela, after co-founder James Lowe cooked alongside a chef who only used unrefined sugars in Zurich. Hence, the recipe has been made using panela, along with brown butter, ground almonds, buckwheat flour and eggs. Find brown butter cakes on the bakery counter at Spa Terminus on Fridays and Saturdays, or order for nationwide delivery." - Emma Louise Pudge

"During the week, the old arches of London's now defunct first railway station in Bermondsey bustle with a different sort of activity. Here, some of the city's finest food producers are busy at work making, baking, and distributing their gourmet goods. On Saturdays, though, many of them open to the public. For those headed down to Maltby Street Market for a Saturday morning stroll, Spa Terminus is the somewhat off the beaten path extension. Go hungry as there are too many temptations: gorgeous produce from Natoora, perfect croissants from The Little Bread Pedlar, the most indulgent doughnut ever from St. John Bakery, and the best coffee in town at Monmouth. My favourite market in this area! Always go there on Saturdays to buy bread at Little Bread Peddlar. The butcher and ice-creams shop also very good. It is not cheap but you are paying for really fresh and organic products, as well supporting local businesses, so totally worth it!

I visited Spa Terminus a few times and the number of shops that were opened were less and less. But in earlier visits, whatever I saw were amazing.

Great market (open only on Saturdays around 9-10a to around 3p - but most stuff runs out before then, esp at the little bread peddled where there's great pastries but expect a line). Be sure to visit both sides of the railway and walk all the way up and down the railway as there are gems all the way up to Maltby & Greek and the Wild Room beyond to the green grocers at the other end, with coffee, Granola, olive oil and jams on the other side of the arch. It's not cheap and outside of the pastries and ice cream there's nothing to eat "on the go", but you can always take stuff and picnic in nearby Spa Gardens!

Hidden gem! Same producers as in Borough Market and other busy places, yet much more remote and quiet. Little Bread Peddler (who distributes all over London) has great breads and pastries that change regularly. Also recommend Ice Cream Union and alll their neighbours!

I found Spa Terminus quite disappointing. Having been on a Saturday at 11:00am I was expecting far more stalls but only about 1/4 of them were open. The only fruit and vegetables seller open was Natoora - which has now become a guarantee - most others were selling wines and cheese. I also found honey and meat, although I was quite let down by the quality of O'Sheas's expensive sirloin steak (£9 for 280g), which after cooking, smelled as if something was off. While staff at Natoora, Husk&Honey, the London Honey Co., Monmouth Coffee were lovely, I felt that in other places, staff was almost bothered when being asked for advice (with the intention to buy, obviously), which I really do not appreciate when you're charging ££££ for groceries. To sum up, Spa terminus market is good to find specialties, but not the best choice if you're looking for a farmers market. Most items are quite expensive (e.g. £3 for 6 eggs, £7 for 250g honey).

Great atmosphere! Open on the weekends with stalls from independant businesses etc. Very busy all the time, great food and drinks. A good place to spend the afternoon with some friends. Few bars on ropewalk (Maltby street) are open during the week until 10pm
