"At the helm of Chim By Siam Wisdom — a charming restaurant set in a century-old traditional Thai house built around an ancient tree in metropolitan Bangkok — is chef Thaninthorn 'Noom' Chantrawan, most recognised in the city for his stint on Iron Chef Thailand. [...] In 2017, Chim By Siam Wisdom was recognised with a Michelin star in the inaugural edition of the MICHELIN Guide Bangkok 2018, and again the following year in the MICHELIN Guide Bangkok 2019." - Rachel Tan
"One-Michelin-starred Chim By Siam Wisdom is set in a traditional Thai house built around an ancient tree. At its helm is chef Thaninthorn “Noom” Chantrawan, most recognised in the city for his stint on Iron Chef Thailand. Trained in European and modern molecular cuisines, Chantrawan spent 14 years working in some of London’s hottest restaurants, including Zuma, Roka, Patterson’s, Momo and Sketch before returning to Thailand where he was spotted by the TV producers of Iron Chef Thailand. The chef's signature dish is the Tom Yum Plachon Bo-Larn, a 200-year-old recipe for a tom yum soup variation that had not been cooked in over a century. Served in a traditional clay tagine, the soup hits all the flavors characteristic of Thai cuisine, differing from its modern-day counterpart with its ingredients and complexity. The Tom Yum Plachon Bo-Larn is served as a soup course, uncovered table-side and then portioned out for guests." - Rachel Tan
"The authentic taste of ancient and traditional Thai cuisine served by the Michelin-starred chef encapsulates the legacy of Lamiat, a philosophy that can be traced back throughout Thai history. Striving to serve the Lamiat taste of authentic Thai cuisine, Chef Noom’s creations are classic dishes that include rare boran (ancient) recipes—some of which date back to almost two centuries in history. Known for their authentic and delicate taste, the menus here are created seasonally to provide patrons with the taste of the finest produce whenever they visit. The restaurant was renovated in 2017. Yum Goong Sa-er, which has existed for about 100-150 years, and the Tom Yum Pla Chon Boran originated from about 200 years ago during the reign of King Rama II, are among the classic dishes." - Michelin Guide Thailand Editorial Team
