"You might assume there's a run on bread judging by the queue stretching up the cobbled rue des Trois Frères. This one-man sourdough spot is only open three hours a day, Thursday to Sunday—and locals know to get here a half-hour before the ever-grinning baker even opens the doors. When finally he does, sending plumes of yeasty air into the street, customers enter one-by-one with all the solemnity of pilgrims to make their selections. The ever-changing offerings are posted daily on Instagram, though the plain Post-It menu has got nothing on the tumbling landscape of heirloom wheat loaves, cheesy scones, and chocolate-studded cookies that welcome you when it's finally your turn. Their brioche is far lighter than most, smelling strongly of sourdough, and even better when toasted, and the house play on a bostock, a buttered slice of bread topped with frangipane and fresh fruit, is baked to golden brown perfection. Be sure to come with enough cash for a few last-minute additions; no cards are accepted." - sara lieberman, emily monaco

"Shinya Inagaki has made bread for some of the most beloved sourdough bakeries in Paris (think Fermentation Générale and the Terroirs d’Avenir boulangerie). At his own operation in Montmartre, Inagaki is making sourdough breads his own way. Olive focaccia, brioches, multigrain breads, and scones are just some of the specials Inagaki scrawls on butcher paper at his tiny storefront on Rue des Trois Frères." - Dayna Evans

My experience was very positive. Great bread and scones, and I felt very respected and appreciated. He was so friendly and helpful that our evening picnic was enhanced with a much better vibe. Smiles and friendly service go a long way, and have a way of spreading to others.

The only true Levain bread I have found in Paris 👏👏 A top Japanese chef that makes each bread with love and dedication. There's a line, and opening hours are limited. We loved the spelta bread.

Very hardworking baker 🧑‍🍳 makes everything by himself and is very nice when serving clients ! Only opens a few hours in the afternoon and you will find a line in front of the shop before it even opens but it’s worth the wait 😊 Everything looks nice and yummy specially the breads. We tried the bread, the scones and the browny : delicious 😋 Definitely recommend trying it

Very cute bakery! Which is presumably led by the owner himself. He is so kind and was very friendly. I bought half a bread and half a chocolate cake for 9 euros.

The bread was the best of all the foods I ate and its quality was excellent. The natural sweetness of the wheat, the crunchy surface, and the elastic, soft texture of the bread were amazing. Particularly delicious was the bread, available only on Saturdays and Sundays. According to a blog post about the owner, Mr. Shinya, he is particular about his creations, from ancient wheat made in France and handmade natural yeast. His attitude toward customers was also attentive and he gave me advice on how to bake. He had a sincere personality. If you come to Paris, visit them :)

This is a place with a story. The owner is very hospitable. It is better to go before opening hours and wait, there will be a line. Everything we bought was delicious. Thank you very much! Note: cash only accepted

It's a very small bakery owned by a Japanese man, Mr. Shinya in Montmartre. Thé shop open at 4:30 and I arrived at 4:20. There were already 16 people waiting in the line and I waited about 50 min to get into the shop. All the homemade breads and cakes looked so good and I bought 3 different types of bread and one apple cake. I felt that it was worth waiting to buy these delicious things. He was very kind and explained about breads not in a hurry even though there were still a lot of people waiting outside. One thing that you need to be careful is that you cannot use a credit card. You need to pay by cash so pls prepare before.

I don’t know how Mr. Shinya does it. He bakes everything and then sells everything by himself. One can feel his incredible passion for his craft. I have nothing but respect for the man. We arrived 30 minutes before opening time, and there was already a line that was formed in front of the bakery. I was rather surprised as it was my first visit. When it was finally our turn, I was giddy with excitement. I wanted to try everything and had to calm myself down. So I finally tried the khorasan / kamut bread, sesame bread, focaccia legumes, flan & cookies. They are excellent! The khorasan / kamut bread, in particular, had this unique caramelized crust that was so delicious. The sesame bread smelled so intoxicating and it was really really good as well. After tasting the bread, I understood why there was a line before the bakery was even open. Mr. Shinya was very friendly and patient, especially when I was still deciding what to get. He is such an inspiration. I look forward to going back to the bakery and trying his ever changing creations.
