Probably the most expensive meal we've ever had, special events aside, but at least it was very very good. The rest, leftovers, bycatch, offcuts, weird veg. Turned into 18 items. Sometimes one at a time, sometimes a few together. All presented beautifully and creatively. I can think of a couple of them that were just ok, many were delicious. The accompanying wines were sometimes great by themselves but not always, but always worked brilliantly with the food. Worth splashing out for an occasion, if you can.

Fast service: 5/5 Friendly service: 5/5 Tasty food: 5/5 Value for money: 5/5 One has to applaud the unique concept - fine dining on leftover food. The concept is well executed as well - from the food, through the storytelling, all the way to the lamps - it all comes together. Quirky dish names, spot-on wine-pairing recommendations, minimalistic interior, and interesting play on textures, tastes, and even temperatures add to the uniqueness of the experience. Service is swift but not rushed, which is a big advantage of the place. The chefs coming out all together once we've reached the end of the meal was the cherry on top of great service. Top tip: For us, four hours were the perfect timing to enjoy the experience.

Honest review of our recent visit to Rest - we were extremely excited to dine here having read the overwhelmingly positive reviews. However, while they did a lot of things right, we left the night pretty disappointed hence the 2 star review. But lets start with the positives: - We loved the concept of sustainable dining and using ingredients which are commonly unwanted. - Service was excellent, with the wait staff always quick to clear your table after each course and refill your drinks. - The chefs took turns to come out and explain how each dish was prepared and how it fits with the concept, which was a nice personal touch. - The desserts were delicious and probably their strength in the menu. However, despite these there were many negatives: - There were about 20 dishes on the menu (13 savoury and 7 sweet). We found all except one or two of the savoury dishes to be overbearingly salty. - The savoury dishes ALL left a fatty, creamy, oily and salty aftertaste in your mouth and while this isn’t a bad thing in itself, after your 5th dish like this you start to feel quite disgusted. My partner and I were praying for a change up or some sort of palette cleanser (which never came) and we resorted to taking turns to take long toilet breaks to slow down the dinner just to get some respite. - The music they played was like a rowdy rock and roll playlist which wasn’t befitting of fine dining and really killed the vibe of an otherwise nice and ambient restaurant. - Extremely expensive, the menu was NOK 1,950 each (not including wine pairing) which is comparable or more expensive than many Michelin star restaurants however that is the only thing Rest has in common with a Michelin starred restaurant at this point. Overall, it is a restaurant with a strong, noble concept with loads of potential, and maybe even a Michelin star down the track if they really work on balancing the flavours and the menu as a whole (feedback I gave to them afterwards which I hope they take seriously). But for now, I could not recommend dining here - for the amount you are paying your money will be much better spent elsewhere.

We had an amazing meal here that was amplified by their emphasis on sustainability and minimizing food waste. It was a disciplined yet relaxed atmosphere which felt warm and familiar from the moment we stepped through the door. This atmosphere was further enhanced by the carefully curated music playlist that was novel yet recognizable and perfectly complemented the mood of our meal. The accolades for Jimmy Øien and team are well deserved, they are definitely a premier dining destination in Oslo.

What a place. The concept, the staff, the flavors, the laid back atmosphere. Everything was a homerun. They do a great job in precenting the prosess of making each dish. Then you understand the value of the price against the time used on making each dish. I had a few dishes I upfront would not think I would like. But they really did some magic, and I was amazed several times.

Built on the idea "No great ingredient should be left behind" Rest seeks to do what other fine dining Restaurants merely suggest, Chef and owner Jimmy Øien not only running a skilled kitchen with thoughtful service but also creating a 21-course menu focused entirely on repurposing Food waste. "A rejection of modern consumerism," the term Rest defined as "what is left," it is across the course of four-hours at tables from thrift shops that guests enjoy everything from browned Bananas to bycatch all treated the same way other eateries may offer Truffles or Caviar. Entirely served by a youthful kitchen staff, usually with a story of why each Ingredient is chosen, flavors are complex while visuals are elegant and by the end diner is not only left with a smile but legitimate questions as to why male Goats might be slaughtered simply because they can't produce Milk or why fisherman are forced to discard Halibut less than 5.5kg from a net even if they are dead. Awarded one green star by Michelin for sustainability Rest thinks forward in a way all should, and plate-for-plate compares favorably to many more highly regarded Restaurants across America and Europe.

The restaurant prides itself on using the foodstuffs others would throw away. The pride is not unjustified. The creativity the kitchen displays in using these raw materials to compose one tasteful and delicate dish after another is nothing but impressive. Along with knowledgeable and friendly staff, Rest is one of the "must go" places in Oslo. Excellent.
