Nestled in Outremont, Provisions offers an intimate dining experience where chefs craft surprise tasting menus from fresh, local ingredients daily.
"Outremont is a mostly residential, mostly francophone neighborhood of Montréal that in recent years has seen the opening of a number of restaurants as the gentrification of the Plateau spreads to its neighbor. Provisions is one of the new generation of restaurants, with just 28 seats and no menu. Rather, diners put themselves in the hands of chefs Pablo Rojas and Hakim Rahal for a five-course ($65) or seven-course ($75) meal. The dishes, served under a tin ceiling, are determined by what is at its peak of freshness on any given day, but you can expect exquisitely prepared fish and meat, and vegetables often in unexpected, flavorful combinations. While the courses may be small, they are rich in flavor."
"If you like surprises, you're in for a real treat at Provisions on the outskirts of Outremont. Every week, chef-owners Hakim Rahal and Pablo Roja write down a list of ingredients on a blackboard. From there, diners can choose between a $65 or $75 tasting and watch as their meal is invented on the fly. The menu is heavy on vegetables, with a touch of meat or fish, and complex, idiosyncratic flavor pairings that defy tradition. Rahal and Roja serve the dishes themselves—a lovely touch in a restaurant that only seats 25." - Todd Plummer, Isa Tousignant
"Simply stated, Provisions is a place that continues to shine. This Outremont restaurant doesn’t have a menu at all — every day, ingredients are written on a chalkboard and the chefs prepare surprise five-course ($65) or seven-course ($75) menus around them. Working with local producers, Provisions reminds its guests that all products were sourced with responsible and sustainable practices in mind." - Carla Bragagnolo, Daniel Bromberg
"A favourite for anyone who thrives on A to Z dining experiences, Provisions is a true force to be reckoned with. The name speaks for itself: the restaurant uses a chalkboard to inform guests of everything the kitchen has in stock and systematically utilizes each ingredient (unless otherwise notified) to serve creative five- and seven-course dinners for $65 or $75 respectively. The wine selection, loaded with private imports, is impressive, too. Check out the Provisions butcher shop down the street as well, open daily." - Daniel Bromberg
