"If you like surprises, you're in for a real treat at Provisions on the outskirts of Outremont. Every week, chef-owners Hakim Rahal and Pablo Roja write down a list of ingredients on a blackboard. From there, diners can choose between a $65 or $75 tasting and watch as their meal is invented on the fly. The menu is heavy on vegetables, with a touch of meat or fish, and complex, idiosyncratic flavor pairings that defy tradition.
