"Model Milk (airy, multilevel dining areas), and Sukiyaki House (sushi counter displaying seafood flown in from Japan) — which offer experiences devoid of steak and ornate dark wood — have continued to change what diners expect of fine dining." - Dan Clapson

"Another eatery from Concorde Group — the same folks behind Bridgette Bar and Major Tom, as well as Pigeonhole, which shares a building with Model Milk — this decade-old, award-winning restaurant sits in a pleasant heritage building on the tail end of 17th Avenue. The space had been a wildly popular gay bar and restaurant in the early 2000s, a business that left behind a unique layout spread over two levels with an open kitchen as the focal point. Order one of the elaborate cocktails and dig into the indulgent signature burger topped with mushroom ragout, cheese curds, and creme fraiche. [$$$-$$$$]" - Dan Clapson

After all these years, this is still one of my favourite restaurants in Calgary! Food: oh man, where to start. Basically, you can’t go wrong. For a table of 4, we tried the shrimp toastie, calamari, beef tartare, and… something else yummy (don’t recall what it’s called). And while they are all a hit, we enjoyed the calamari the most. The burger is always solid, but my friends enjoyed the halibut, flat iron steak and the chicken. Model milk does a great job making classics their own and memorable, while also doing the simple things well. Apple pie was a great way to finish such an awesome meal. Service: attentive, friendly, but still elevated enough to make customers feel special and that they are enjoying their time out. Our server however did make an error on our bill. Atmosphere: I love the vibe of model milk, industrial, elevated but not fussy. Great for any night out. Value: for the taste, quality and quantity I think it’s great value. Will be coming back time and time again, and on my highly recommended list! Make sure you make a reservation in advance.

Amazing service, atmosphere, and of course food! The stories you've heard about the fried chicken are true: it's delicious! And if you get the shared platter, be prepared to to bring some home. Our servers were attentive made sure that we always had clean dishes and full glasses, and made us feel right at home. I also loved that they had a diverse selection of non-alcoholic beverage: beers, cocktails and even a wine. My only regret is not having enough room to try more food. I'll definitely be back for the octopus.

I had been here before but only for dessert, which was great. This time we went for a meal and had the calamari to start, as well as the fried chicken with coleslaw & biscuits, and pork with peppercorns, rutabaga and chrysanthemum as our mains. The calamari and the fried chicken were great, but the pork was the most awful thing I've eaten in a very long time. The chrysanthemum tasted disgusting, both because it is sharply floral and bitter, and also because it was charred for the plate. The rutabaga was as weird as ever. I feel like they were trying way too hard with this dish. A simple rutabaga mash would have been fine, but instead, it was shredded in such a way that it looked like it had been through a food processor and then not even cooked all the way through. The sauce used in that pepper and pork dish was almost kind of soupy and did nothing to pull the flavors and textures together. The pork was not that tender, it didn't even melt in the mouth. I don't understand how they can make other exceptional dishes and then totally bomb another. It was so bad I probably won't ever go back again. The venue is nice the service was pretty good, but this dish was enough to send me running. I thought I should let everyone know to never order this and perhaps the restaurant should take it off the menu (or do a complete overhaul on it).

We are here on a weekend getaway to Calgary and I did my research to find a great restaurant to try (I'm a big foodie) and I landed on Model Milk. Their menu is appealing, fresh ingredients, and a great selection of apps and entrees. Upon arrival, we were stunned with the beautiful "warehouse" feel to the inside. It's eclectic and interesting. The service was fantastic. To start I had the PEI pink moon oysters. The oysters themselves were wonderfully fresh, salty and buttery. The freshly grated horseradish was a nice bite to add on, and the fermented hot sauce was flavorful and had a great heat. I had the harissa glazed octopus, and my wife had the Icelandic cod. Both dishes were absolutely wonderful. The octopus was tender, the harissa left a nice spice note. The pickled elements and fresh herbs added layers of flavor throughout and the espelette puree was to die for. The cod was buttery and melted in your mouth, with the chicken skids adding a well needed crunch to the plate. The sauce was craveworthy, rich and creamy. Overall, a wonderful dining experience, will 100% return to try other dishes.

This is definitely a new favorite for me. Staff are super friendly, and the food was incredible. I loved everything I ate and can't wait to try more. My personal favorite, though, were the shrimp toasties. AND...the coleslaw that came with the fried chicken! The dressing was so light, smokey, and delicious. I dont know how they did it! They need to release a cookbook! Lol!

Very nice place for dinner. Upscale atmosphere. The service was AWESOME. We had a reso at 8:15 and kept it but I mentioned it was a bit late and we may cancel. They called me back shortly after with an earlier seating. I really appreciated that. The waitress was super friendly and quick as well. 10/10.

Model Milk was a great experience! Staff is very attentive, and food was good. I had the flat iron steak which was good, the other people dining with me had the scallops and the octopus. I will definitely be back in the future!

Cocktails and service were amazing! I had high hopes for the food- and while it tried, it didn’t hit as high as we were expecting. We ordered many dishes, including the crudo, tartar, cavatelli, calamari, and the fried chicken share plate with biscuits. Unfortunately they were out of all their bread dishes. We first had the tartar. Oddly, itcame with lettuce and not a bread or cracker, which completely overpowered the flavour profile of the tartar (which was honestly better just by itself). The crudo was good but the flavour was flat considering how many acidic and tasty things were supposed to go with it (ex: couldn’t even get a hint of green apple on most pieces which I was VERY excited for). the calamari was super interesting and very flavourful, and the cavatelli had really good flavour but was extremely dense, to the point we questioned if it was just underdone. The chicken platter, however, was very good cook and flavour, and the biscuits were phenomenal. Probably wouldn’t go back anytime soon, but was a good experience as it was on our bucket list for a while!
