"La Pergola is a Three Michelin Star restaurant known for its exceptional selection of fine wines and exquisite food-and-wine pairings. The head sommelier, Marco Reitano, has been at the helm for three decades, guiding guests through a curated wine experience that complements the culinary creations of chef Heinz Beck. The restaurant focuses on balanced wines that are easy to drink and pair well with modern dietary trends, enhancing the dining experience without overwhelming the dishes." - La Guida Michelin
"Closed for refurbishment works until April 2024. Rome’s most famous roof garden, as well as the most international restaurant in Italy. From the terrace at La Pergola, Rome appears eternal and imperturbable, as it is so often described. The ambience here is hushed and elegant, with carpets and armchairs, silverware and fresh flowers, paintings and refined furniture all providing a magnificent setting for the superb views. Heinz Beck’s cuisine is classic and timeless, featuring much-loved favourites such as “fagottelle” filled with carbonara alongside more seasonal dishes such as broad bean and pea buttons with asparagus and nduja-flavoured baby squid, and turbot served with asparagus, seasonal mushrooms and wild garlic sauce. The cheese trolley and the desserts, including the delicious chocolate soufflé, are not to be missed. Choose between two separate wine lists: one dedicated to Italian labels, the other to wines from around the world, both featuring some excellent rare vintages (including classic labels from Tuscany and Bordeaux, some of which date from the beginning of the last century), as well as lesser-known labels selected by talented sommelier Marco Reitano." - Michelin Inspector
"La Pergola, located at the top of Rome Cavalieri, a Waldorf Astoria Resort, is the only restaurant in Rome to hold three Michelin stars. The fine-dining institution, considered to be chef Heinz Beck's masterpiece, offers an extravagant 10-course tasting menu. The restaurant is known for melding avant-garde technique with regional Italian products, and its 2,500-label wine list features some of the world's rarest and most expensive wines. La Pergola's artistic sensibility is evident in its decor, featuring rare artifacts, and its menu that honors Italian regionality while offering a global point of view." - Maria Yagoda
"La Pergola dinners are extra special thanks to the restaurant's exclusive location on the rooftop of theRomeCavalieri hotel on Monte Mario hill. Gaze upon the urban sprawl of Italy’s Great Beauty while enjoying the only Michelin three-star menu in Rome . Chef Heinz Beck commands each table with his signature dishes, like venison with crisp licorice on polenta and persimmon, while waiters address your every need with the grace of ninjas. If a panoramic view of the Eternal City isn’t good enough, maybe you’ll find some solace in the 3,000 labels from La Pergola’s masterfully curated wine cellar."
