"Following complete refurbishment, the new Pergola pays tribute to the colours and materials of Rome, from the Travertine marble to the red colour scheme. The terrace has also had a facelift, but fortunately the view hasn’t changed – however many times you come here, you find that your memory never quite does justice to the magnificent and expansive views of the capital. Below Monte Mario hill, the whole of Rome, encircled by hills, is spread out before you, appearing silent and enchanted, almost as if it were dozing. Although he’s been at the helm here since 1994, Heinz Beck’s enthusiasm remains undiminished, as he continues to update his dishes, explore new avenues and create classic and imaginative cuisine with a strong Italian and Mediterranean flavour. In addition, in his quest for light and healthy cuisine Beck always chooses sustainable ingredients of the highest quality. And finally, the icing on the cake is provided by the spectacular wine list and sommelier Marco Reitano, a master of fine wines who is at the top of his profession here and offers service with a friendly smile." - Michelin Inspector

"Guided by my empathetic, guest-first approach, the wine experience here is about curiosity and pleasure: many guests now entrust me with their choices and the bottles that resonate most are those that truly "surprise" them, while others thrill me by ordering old Barolo or Bordeaux vintages, rare whites like Montrachet Grand Cru, or the first vintages of Sassicaia from Tenuta San Guido. At La Pergola, I’ve had the honor of uncorking some of the world’s best wines—including 1900 Château Lafite Rothschild, 1893 Château d'Yquem, 1947 Barolo Borgogno, and 1955 Biondi Santi Brunello di Montalcino Riserva—with a singular, unforgettable high point in a 1917 Romanée-Conti Monopole. In constant collaboration with Chef Heinz Beck, we shape pairings that let ingredients take center stage and never overwhelm the extreme elegance of rare wines. We take care not to burden diners’ digestive balance and never impose our opinions, always respecting personal taste so the experience remains anything but didactic—filled instead with pleasure and positive emotions." - La Guida Michelin

"La Pergola is a prestigious restaurant in Rome, renowned for its exquisite dining experience and has earned three Michelin Stars." - The MICHELIN Guide

"La Pergola, located at the top of Rome Cavalieri, a Waldorf Astoria Resort, is the only restaurant in Rome to hold three Michelin stars. The fine-dining institution, considered to be chef Heinz Beck's masterpiece, offers an extravagant 10-course tasting menu. The restaurant is known for melding avant-garde technique with regional Italian products, and its 2,500-label wine list features some of the world's rarest and most expensive wines. La Pergola's artistic sensibility is evident in its decor, featuring rare artifacts, and its menu that honors Italian regionality while offering a global point of view." - Maria Yagoda
