Hart is yet another bakery started by ex-Noma baker. I tried one of their more famous pastry, a cardamom croissant (42DKK) and flat white (45DKK). As the name implies, unlike traditional cardamom sweet bun, this one used croissant dough, with the texture almost similar to kouign amann. Pretty unique experience and I appreciate the fragrant cardamom. If there’s criticism from my end, it’s that I felt that the croissant was slightly too burnt. It’s also nice that compared to other famous bakery, Hart has almost 10 branches in Copenhagen, which helps distribute the crowd😅. Flat white was also quite good with strong floral notes. Another item which I really enjoyed from their bakery is actually their sourdough, which made a wonderful based for my breakfast sandwiches at home.
