We had a lovely visit to Apollo Inn!! We had a fantastic experience at Gimlet the night before so thought it might also be great. We were not disappointed!
A small cozy room with 20 or so seats with a lovely bar and a nice atmosphere.
We tried several of their signature cocktails...
The Lucien Gaudin, made with Tanqueray, Campari, Scarpa extra dry vermouth, and house Marnier, was like an elevated, more delicate Negroni. I thought it was absolutely fabulous and would happily replace all my Negronis going forward with this!
The John McClain, made with Talisker 10, Nikka from the barrel, Morris signature single malt, vaniilla, bitters, was an old fashioned riff with a bit of smoke. Also fantastic.
And I had a Chicago Fizz, made with Rhum JM Agricole, Plantation dark rum, lemon curd, passionfruit & port wine. I absolutely loved this and would come back for it again and again.
And then we tried a Honeysuckle, with Pampero blanco rum, fermented leatherwood honey, strawberry and jasmine. This was beautifully balanced as well and we all fought over it.
Not a miss on the night!
Appreciate the perfect ice as well!
We had dinner before coming so didn't get a chance to try their snacks, which look excellent.
Service was also phenomenal throughout the night. Attentive, friendly, guiding when asked.
Can't wait to go back!!!

Been a couple years as we live in Tasmania.
Came back just for a drink.
Had another exceptional night, in large part due to Nico.
I told him that we’d just come in for a drink and he made our night.
3 for 3 bangers on the first round of his recommendations. Gibson, John McClain & Lucien. The recommended a Spanish Steps and the Blinker. Also bangers.
Food was stellar.
And then a Vieux Carré.
Just a lovely human who was so invested in us. So much more than just coming in for a drink.
