"Sure, rooftop bars are pretty great, but AP Bakery is something even better: a rooftop bakery. On top of the Paramount House Hotel in Surry Hills, you’ll find trays filled with freshly baked baguettes and bagels, flaky pies, focaccia, buttermilk croissants, buckwheat dark chocolate croissants, cream-filled donuts, and sweet fruit danishes. It’s the perfect place to enjoy one of Sydney’s (almost always) sunny mornings, with a coffee (Reuben Hills supplies the beans) and city views. There are some larger options on the menu too, like a crispy bacon sandwich on fermented potato ciabatta, wagyu beef pies, and seasonal salads. " - Caroline Clements 33

Team was very friendly and fast. Great vibe for autumn with outdoor seating. Didnt dine in this time but would come back for it. We got 2 savoury and 2 sweet items. All amazing and fresh. The bread was soft on the tomato roll. 3 milk bun wasn't too sweet and perfectly balanced filling inside. Chocolate chip cookie was yum- chocolate in every bite. Brisket pie was definitely the star and our favourite!

AP House is located on the top floor of the Paramount building. To access, head through the cafe at the front, towards the back wall where there will be a lift to take you up. Excellent bakery, and I say this as not-a-big bread consumer nor fan of sandwiches. The offerings sound simple but they get the basics right with premium ingredients and it’s truly satisfying. Would rate the hot pocket. We’ve waited on weekends for tables and we’ve also walked right in on weekdays. Either way, early bird catches the fig tart and once it’s gone it’s gone! Lovely spot on the rooftop with a cactus / succulent garden and trendy patrons!

The pastries are amazing! We tried several of them and our favourites are Salted Pistachio Flan and Fig Ricotta Almond Danish. Not too sweet with complex while balanced flavour. The twice baked croissants have perfectly baked, very flaky but too sweet to our liking. The coffee was a surprise. Love the acidity in it and had a wonderful piccolo. The terrace is cozy to enjoy all the delightfulness. But it already got a queue when we left early morning on a weekday, so be prepared to wait for a while. Would love to come back and try some savoury baked goods next time.

Coming from Melbourne with many amazing bakeries, I must say this rooftop bakery is a must-visit in Sydney. It won’t disappoint you. Fell in love with the Salted Pistachio & Rhubarb Flan, it was outstanding! Loved their Hazelnut & Chocolate Praline Twice Baked. Also ordered the Zucchini Flower & Ricotta Focaccia which was good. Overall a great experience with pretty cool rooftop vibes.

Visited on a Saturday around noon. To find the entrance, you walk through another café and take the elevator up to the second floor—a bit hidden but worth the discovery. We waited around 35–40 minutes for a table, which seems typical for peak weekend hours. You place your order at the counter first, and your food and drinks are brought to your table once it’s ready. We ordered the Baker’s Breakfast with a hashbrown and an extra side of sourdough. It was decent, though fairly average overall. The smoked brisket pie, however, was a pleasant surprise—the pastry was beautifully flaky, and the beef filling was soft, tender, and full of flavor. The vibe is relaxed and welcoming, making it a great spot to catch up with friends or family. I’d definitely come back to try more of their pastries and other menu offerings.

Finally tried the viral AP House in Surry Hills and it absolutely lived up to the buzz. Came by on a Monday morning and the place was already packed—had to wait around 10–15 minutes for a table. The selection of freshly baked pastries and bread was incredible. Everything looked (and smelled) amazing. Can’t wait to come back and try more of the menu—definitely a new go-to for pastry lovers!

Overrated. First off, the ordering staff rushed us, even though it was our first time here. No recommendations, no patience—just pressure to order fast. The other staff were nice, but that first impression wasn’t great. Now, onto the food and drinks. We tried: 🥯 Three Milks Bombolini – way too sweet, I could barely eat it. 🥧 Chicken Curry Pie – so salty I had to spit it out. 🥮 Salted Pistachio & Rhubarb Flan – the only one that was edible, but I only ate the berry part because that’s all I could handle. 🥤 Yuzu & Sparkling Water – tasted like plain sparkling water, nothing special. Everything was overpriced for what it was. My friends and I usually aren’t that picky, but even they didn’t enjoy it. We forced ourselves to finish the pastries because they were so expensive, but we wouldn’t come back. Maybe other menu items are better, but if you’re planning to visit because it’s viral online, lower your expectations.

Located on 2nd floor, offers charming rooftop terrace seating and a bustling ambience. Great and unique variety of both sweet & savoury pastries. Got the warrigal greens ricotta pie and the fig almond danish. Both were stuffed to the brim with delicious filling. Pie wasn’t too heavy, danish wasn’t too sweet, both tasted fantastic - highly recommend.
