The food is delicious, well presented. I only didn't like the grilled vegetable side dishes because they were like steamed, not grilled, and the blanched french fries. Everything else was delicious. The service is friendly.

The staff are not only professional and attentive, but genuinely passionate about what they do. They were knowledgeable about the menu, offering excellent recommendations that enhanced our dining experience. As for the food—wow! Each dish was a masterpiece, crafted with creativity and precision. We started with the freshest seafood appetizers, which were an explosion of flavors and beautifully presented. For the mains, we had the Beef Wellington and the Argentinian steak, and both were exceptional. The Beef Wellington was perfectly cooked, with tender beef encased in a flaky, golden crust, while the Argentinian steak was juicy and bursting with flavor, cooked to perfection. Every bite was a delight. We finished off with decadent desserts that were almost too pretty to eat—almost. 59 Republic offers the complete package: impeccable service, exquisite food, and a captivating atmosphere. It’s the kind of place where you can tell that every detail has been thought out to create an unforgettable dining experience. A true culinary treasure in Valletta!

This lovely restaurant is located on the main square in front of the palace. It looks incredibly elegant and the food is mind blowing. Not for nothing the chef was named “best Maltese chef” and the menu and creative dishes definitely prove that.

Arrived a little early for our booking but immediately seated. Very attentive service by Abhi. Ordered cocktail first , Bangkok Mule and G& T both served beautifully. We then ordered our meal after being told all the specials. Served a lovely selection of bread. Ordered a Pinot gringo Italian wine at reasonable price. The wine selection was extensive! Our meal was Duck tacos to share...very tasty , then we both had beef wellington with grilled veg and truffle mash and pepper sauce. The beef was amazing, just melted in mouth mine served medium rare and my husband's medium. Great portions. Couldn't do justice to a dessert. Only down points were hand dryer in ladies not working and the next table were offered digestive drinks and we were not! The bill for 2 came to €171 which was ok for a Michelin restaurant. A very pleasant evening.

Food was very delicious! Location of the restaurant beautiful! I wish I can say the same for the service… Place was overcrowded, with both booked guests and walk - ins. For a restaurant at this level, guests should be served much better, detailed. Instead of seeing the staff running around, speaking foreign language between each other, we weren’t even asked for a drink refills, or how the meals were… Im sorry but for the price we paid there for a dinner, this was under expectations. Price of a fine dining, but service of a local grill. At least we enjoyed the food! Thank you for that.

Amazing dining experience here, the service was exceptional. Would have been 5 stars for food for not the inconsistent old fashioned cocktails. 1st round it came weak and tasted quite diluted, 2nd round it was strong and great. The food was delicious, highlight dish was the beef wellington which was cooked perfectly - other notable shout out would be the belly pork starter which were super tasty and moreish. Beef tartare nothing special unfortunately but enjoyed very much still.

Based on two meals, one business dinner and one couple lunch The pros : on both occasions, I was seating on the square and it was pleasant due to the clement weather conditions (it may be too hot during the summer). Food quality and presentation was very good, and service excellent. Toilets in the basement are originally decorated. The cons : I wish that there were more options of vegetable dishes on the menu, particularly in terms of starters. This was resolved by asking for one of the side orders as a starter. Wine selection is good, but prices are on the high side. During the business dinner, there was a private party in the basement and music was too loud to permit conversations.

Beautiful decor both inside and on the terrace. Very good service, staff was quite attentive as well. The wine selection was beautiful, they also made the best espresso martini! When it come to food, oh my god, the fillet was cooked to perfection and the mashed potatoes were sublime. Highly recommended. Can definitely see why they are Michelin recommended.
