For the climactic dinner that they prepare for critics, rival restaurateurs, and jazz icon Louis Prima, Tony Shaloub cooks timpano, which he describes as “one of the most important things in the world.” His lovable Italian accent and the incredible looking baked pasta make me think he might be right.
