"Touted as one of Chicago’s most acclaimed restaurants, Loyalist — a casual spot underneath two-Michelin-starred Smyth — is debuting an inaugural Sunday brunch on January 15 from 10:30 a.m. to 2 p.m., with reservations via Tock. I was struck by the emphasis on pork, highlighted by thick-cut bacon that aims to elevate the usual brunch offering and an ambition to be “the king of swine.” Owners John and Karen Urie Shields have long looked forward to offering brunch but it took longer than anticipated; their menu aims to excite with dishes like truffled deviled eggs with black truffle and tarragon and a foie grade eclair with a foie gras ganache and black truffle-lavender cream. They’re also serving the full cocktail menu alongside new brunch drinks, including an Irish coffee spiked with Tullamore Dew, a Coffee Grog with rum and grapefruit, and a cocktail named Nicolas Sage." - Ashok Selvam
