Tasting menu dishes feature carefully acquired ingredients in intricately plated still lifes: Beetroots tumble onto the plate in sorbets, meringues, and crumbles; carved rectangles of Challans guinea fowl perch precariously on celeriac risotto next to a lobe of molten foie gras.
