"I've seen Little Saigon's Pho Bac Sup Shop pivot from dine-in to multiple takeout formats and will launch its first-ever delivery option Wednesday using a 'Pho Mobile' — a tricked-out old parking enforcement vehicle serving pho out of the back almost like an ice cream truck. A portion of Pho Mobile sales will go to the Chinatown-International District Relief Fund and to provide medical supplies to International Community Health Services. Until the Pho Mobile is fully ramped up, takeout is the main option at Pho Bac Sup Shop and its Denny Triangle and Rainier Valley outposts; because their well-known pho doesn't travel well, they offer Pho Now (a paper bowl recommended to be consumed within 20 minutes) and Pho Later (broth, noodles, and toppings packaged separately). You can also buy 32-oz broth containers, choose from family meal deals (one includes appetizers, bun bo hue, and the popular ube cheesecake from Hood Famous Bakeshop, with the option to add a $20 bottle of wine), and order online for pickup daily from 10 a.m. to 9 p.m. — the team says they're trying to stay nimble, and there was even an incident where Khoa was admonished by an enforcement officer over a 'Seattle Pho Dept' logo on the Pho Mobile." - Gabe Guarente
