"Food trucks often frequent the mellow North Shore surf-town of Hale‘iwa—and Giovanni's remains the fan favorite! Each platter contains two scoops of rice and a dozen jumbo shrimp: lemon-butter, hot and spicy, or the classic garlic-rich scampi-style. Add hot sauce or a side of homemade mac salad... or go rogue with a garlic hot dog smothered in scampi sauce. The truck was initially crisp and white, but has been steadily graffitied with the signatures of chefs and customers since the mid-90's. Dig into a bowl of ramen, garnished with sesame seeds, green onion, ginger, a soft egg, and wakame (dried seaweed). From there, things get lively with additions like oxtail won tons and togarashi shrimp with housemade kimchi. Other standouts include lamb lumpia and pork belly bao (buns). Adventurous eaters should try the uni gnocchi—made with creamy urchin gonads—enhanced by leeks, tomatoes, and butter cream sauce. A popular late-night stop, Lucky Belly serves its full menu until 12 a.m. every night except Sunday. "Great Garlic Shrimp on the North Shore If you're in Oahu's North Shore area, stop for lunch at Fumi's Kahuku Shrimp truck — it's the one with a mural of a gigantic, rearing shrimp. They're not rock-bottom cheap, but you get a lot for your money; $13 gets you a plate piled high with fat, juicy shrimp dripping with garlic butter, two big scoops of rice, and a (skippable) salad. Seating is outdoor-only on plastic tables and chairs, but it's probably the best option for these messy, delicious peel-and-eat shrimp. The pond where they farm their shrimp is right next to where the truck is parked, so you can't get any fresher than that!"

"The Elusive Camille's on Wheels Camille's on Wheels is a roving food truck. Undoubtably, the blue and green truck will be on Oahu, but finding Camille's location can be like a game of hide-n-seek. Camille cooks for film crews and caters events. Her food is prepared from scratch and her local flavors are favorites of anyone who finds her. Here food includes BBQ and a selection of tacos. Appetizers and desserts are also on the menu."

"Suck, Peel, Dip, and Eat A trip on Oahu's windward side to the North Shore is not complete without a stop at the yellow Shrimp Shack. Two wonderful women operate this truck and serve up locally sourced fresh shrimp and other delicious food. As a warning, the meals are usually loaded with garlic and spice, but oh so wonderful. Instruction are painted on every yellow table top: "Suck, peel, dip, and EAT." Drinks (and other convenience-store items) are available at Ching's Store next door. The truck is bright yellow and impossible to miss on the North Shore. Be sure to stop in and say hi and indulge in some amazing spicy shrimp!"

"Wahoo! I first visited Wahoo's Fish Taco in Denver and have been going back ever since. It seems much more appropriate that Wahoo's, with its surfboarding theme, has a location in Hawaii. The location I frequented is in Ala Moana. Time permitting, I would get my food to go and sit at the Ala Moana Beach park for a picnic dinner. Wahoo's has a good selection of burritos, salads, and tacos. A pitcher of margaritas or local beers are usually popular with a group as well! If you collect stickers, just ask at the counter and if they have any on hand, they will gift one to you."
