"COVID-19 update: Temporarily closed. Located in Hotel Palomar, Sable is the destination for a few drinks or a full meal. They serve gastropub dishes with an American twist, and a long list of wood-fired flatbreads. Their 14-page cocktail menu is garnering plenty of attention, too, for its mix of old-fashioned drinks (a long list of options for a good old Martini) and new twists (Ice & Fire, for example, is a tequila-based drink with Sriracha, cucumber, agave, and fresh lime)."

"One of Chicago’s most pedigreed bars is dipping into ‘90s nostalgia, the era when MTV started to drift away from playing music videos. Sable Kitchen & Bar, the essential cocktail lounge in River North attached to the Kimpton Hotel Palomar Chicago, plans to bring back those spring break vibes when MTV VJs would set up remotes from Daytona, Cancun, Jersey Shore, and other beach destinations. It’s called Aloha Beaches: A ‘90s Spring Break Pop-Up Bar and starts on March 31 and goes through April 30, according to a news release." - Ashok Selvam

"But Sable in the Hotel Palomar is pretty great if you’re looking for a low-key place to catch up with someone downtown. It’s cozy and relaxed inside - and they have good bar food (like truffle popcorn and a solid burger) not to mention a long whiskey menu that you can navigate while killing time downtown." - Adrian Kane

Very nice spot. The staff were incredibly nice and friendly. We sat at the bar for cocktails. The cocktails were all clever, although they were not cheap, they definitely earned their prices, especially in this neighborhood. Very glad to have randomly stopped in here. The setting Is nice generally, but the bar felt really comfortable relative to many of the other busy busy bars in the neighborhood

Food was very good. My husband had the 2 egg breakfast. I had the fried egg sandwich. The potatoes were so yummy. Small quaint little place. There is a mix of booths, couches, and higher table with bench plush seats on one side and individuals chairs on the other. Very clean, good service. We had an issue with our order being lost for a moment in the mix of things but the staff came out and was honest about what happened and offered compensation. They even sent us on our way with some yummy popcorn. The same menu is offered in room if you are staying at the Palomar. Nice job Sable!

I met a friend here for drinks on Sunday this past weekend, while I was in town for a conference. When I walked in, the place was pretty empty, not unusual for a Sunday. I sat down at the bar and talked to the bartender briefly about their drink list. I had absolutely no idea how extensive the list was. There is an entire page for gin & tonics. They have classic cocktails with a twist, and their "unforgettable" cocktails. The bartender had only been working there for a few months but he had the entire list memorized. After my friend got there, she told me it was on of the best cocktail bars in the city and she had always wanted to go. The waitress was so funny and quirky. She also had so many recommendations and was very knowledgeable on the drinks. When she was busy at other tables, what I can assume was the manager would swing by our table and ask how our drinks were. He was suggest other drinks based on our taste preferences, and assured us if we hated it he would send it back and try something new. It was such a nice surprise for being in downtown Chicago. I would go back again in a heartbeat.

Always solid cocktails at this bar. We were staying in the polamar so this place was great for a night cap. They have a great cocktail list. The bartender was friendly and quick. Ice cubes were nice and clear. The old fashioned a are always a go to when I visit here.

Fantastic cocktails and usually a good but not overcrowded bar scene. All the food that I've had has been great, although the oysters were poorly shucked. Bartenders are super friendly and informative as the concoct those perfectly made drinks. A more sophisticated scene than others in the immediate area.

Terrific brunch with a great vibe and music playing. Attentive service and great food. The highlight of this place is their tremendous selection of bourbon, single malt scotch, and other spirits. I took a picture of the very hard to find Blackadder, one of the best single malts in the world (in my opinion). Highly recommend this place for that reason and yeah the food and service is top notch.

Just stopped in for a quick after dinner drink. The atmosphere in this place is amazing. Everything is classy and well though out. It is dark but not too dark where you bump your knees on everything. I just got a beer on tap but I hear their specialty cocktails (especially their whiskey ones) are amazing. They are pricy at $14 a piece. I didn't try any of the food but from what I saw waiters carrying by me the whole time I was there and from what my friends have told me, it's worth checking out.

This is a really great place. The ambiance and decor is relaxed with a nice upscale feel. The food is fantastic and the staff is friendly. They have a nice cocktail and spirit selection. We stopped here for a late lunch and ordered a few sharables. Everything was wonderful. The calabrian toast (on the weekend afternoon menu) was absolutely amazing. We also ordered the fries, which were good but not great, although the garlic aioli made them much better. I would definitely go back the next time I'm in the city. For couple cocktails and some small plates, this place was perfect.
