"The pastry case at La Cabra in the East Village is chock-full of cardamom buns, plain and specialty croissants, and danishes, with more layers than a style influencer’s get-ready-with-me TikTok in winter. The lighter-than-air pastry gives you 1/100th of a second of blissfully crunchy resistance when you bite through it, then disintegrates into a buttered cloud. "Even on a random weekday with bad weather, there’s going to be a line at La Cabra in the East Village starting the moment they open, and it won’t really let up. However, the wait isn't atrociously long though, and it's definitely worth it. The speciality here is cardamom buns, and these sticky, airy, delicately-spiced knots of dough are second to none. Anything you order from the pastry case will be excellent, but you should also order a loaf (or two) of dark, dense bread and take it home to slather with your finest salty butter. "Their cookies, their cardamom buns, the rye tart...with desserts, I'm very basic, and I like to keep it really simple. But Tan [France from Queer Eye] is the one who converted me to cookies that have warming spices like ginger or cardamom. The ones at La Cabra are really great. The almond croissant is also unreal. It has the right amount of almond paste. It's not like when you get a chocolate or an almond croissant—it's fudgy and very generous.
