This hotel gets the job done.
The beds were singles; on the plus side, my wife was excited not to have to sleep next to me...but they were also only a slight upgrade over army cots. The shower is adequate, although if you're picky about your products, I'd bring your own shampoo and such. It isn't exactly brand new, but it was clean, and I wouldn't be surprised if it's as modern as any of the hotels in Kuching.
The breakfast buffet has many options, some even tasty enough. I was happy to see some steamed broccoli and carrots one morning, as just about everything I'd had in Sarawak up to that point was fried, but they were nowhere to be found the following day.
The staff is nice enough, although a bit forgetful. The guy who checked us in at the front desk ran my card twice for the deposit, and wouldn't have given our passports back unless I reminded him to go grab them off the copier. Nothing malicious, he just had a lot on his mind.
The best thing about the Kuching Hilton is the location. It's a few short steps away from the Sarawak river, so you can easily walk out and wander the waterfront when everything starts to open up around 6:30 or 7 pm. It wasn't exactly full up when we visited, so chances are you can snag a view of the river, like we did.
There's a pool. And that's all I have to say about that.
