Joule is different. At this Korean spot in Wallingford, the stock characters are certainly there, just with creative twists that work well. Steaks come in the form of kalbi short rib, sides stretch far beyond the usual call of duty (hello, rice cakes with chorizo and mustard greens), and there's no bread basket in sight—just scallion pancakes with crème fraîche and salmon roe.
