"Whether you’re staying at Inness or just passing through Accord, plan to eat at the hotel’s restaurant, especially if you need a spot that fits the "nice sit-down dinner" bill. Book a table on the early side so you can nab a seat on the porch—it’s a first-come, first-served situation, and the best spot to gaze at the rolling Catskills with a plate of some hyper-seasonal root vegetables in front of you. (The dining room is a completely acceptable plan B, even if it is overwhelmingly beige.) Start your meal with some sourdough and boquerones, then follow that up with one of the pasta dishes and the juicy roasted chicken on a bed of creamy potato puree. Afterward, grab a beer and an open Adirondack chair by one of the fire pits.
