Give each bagel a good squish, and you’ll feel the crust crackle just a little as you push down, before the bagel dutifully springs back into form like a stress ball. That’s how you know that it’s big and fluffy, but still dense enough to support the chunky home fries in their breakfast sandwich—or an extra layer of jalapeño cream cheese.
