"Since Massimo Laveglia brought his shop to the West Village last fall at 104 Christopher Street near Bleecker, I've watched the line out the door and sampled the crunchy, charred slices that have come to be regarded as some of the city's best. Laveglia, who opened L’Industrie in Williamsburg in 2017 and knew almost nothing about pizza at the time, recreated the original location's sandwiches, pastries, and soft‑serve gelato here; the new shop has indoor tables and a standing counter, but many people hover outside with their slices and spill burrata onto the sidewalk. After several visits I feel confident saying the pizza here is better than the original: the line moves quicker, the kitchen has room for twice as many cooks who tend pizzas like they're working a Michelin‑starred line (one spoons burrata, another grates Parmesan), and though my slices were a little overcooked for extra crisp, the sourdough‑style crust still has chew and folds without cracking; the underside is speckled with char marks "like the pelt of a giraffe."
