Chin — the baker and co-owner who trained in Paris after fleeing Cambodia as a teen — died on July 16 at 65 after a seven-year battle with prostate cancer, and a sign pasted to the shop window noted that the people who enjoyed the bakery’s pastries and breads over the past 20 years meant everything to him.
