A luscious corn and scallop soup started everything off before winding to tender slices of bulgogi garnished with ripe peaches and finishing with a watermelon fruit salad. The ingredients were completely of the moment, while the flavors and formats reflected chef Ki Kim’s distinct modern Korean point of view. While choosing a favorite among the parade of hits is hard, the tomato perilla salad was stunning. Juicy-sweet tomatoes were at the forefront, their tangy profile reminiscent of naengmyeon broth, while a perilla sorbet brought an herbaceous and cooling effect.
