
"I’ve watched this small, pandemic‑born bagelry grow from a home operation into one of the city’s most in-demand independents and now move into a permanent storefront at 2606 St. Louis St. on the Lafitte Greenway. Owner and chef Breanne Kostyk started Flour Moon while recovering from a double mastectomy, launching in May 2020 from a home oven and scaling through Instagram pop-ups and a weekly spot at Coffee Science before signing a lease in May 2021. The rotating weekly lineup usually includes Everything (the best-seller), sesame, poppyseed, pumpernickel, rosemary or sage sea salt, and whole wheat, with special repeat offerings like za’atar, cacio e pepe (inspired by a pasta at Josephine Estelle and routinely blowing people’s minds), onion and sumac, and cranberry sage; the shop’s “plain” has a touch of sea salt. In the Mid City storefront she plans to sell bagel sandwiches and tartines for breakfast and lunch, offer a small-fish program with gravlax and beet-cured salmon, serve Hey!
