"Wood floors, white walls, and high ceilings give Timbertrain’s Gastown location a light, airy feel. The current trend toward lighter roasts is in full swing here, and the carefully selected crops are roasted at Timbertrain’s Depot roastery near Commercial Drive. (That location also hosts workshops about everything from latte art to proper home brewing.) You can choose from a seasonal rotation of individually made brews at the pour-over station, but aficionados from near and far flock to the Gastown shop for the legendary nitro cold brew, which is made by soaking the coarsely ground coffee in cold water for hours, then pressurizing it.
