Like the complex, layered flavors for which the chef is known, the room conveys a sense of luxury and highbrow sophistication. Menus change seasonally, but Hawksworth’s attention to detail never wavers. As it should, the plating reflects his sure hand; polished but not pretentious, the dishes mirror the care with which he approaches his cooking. The seven-course parade includes seasonally appropriate, locally sourced crab with quince and sour cream, mussels with celeriac, cod with forest mushrooms, seared foie gras, and duck—oh, and two desserts. This is a serious place.
